When camping, a simple yet delicious foil packet meal saves time and preserves the natural flavors of ingredients. These roasted potatoes and mushrooms are tender and flavorful—perfect as a main or side dish on any outdoor adventure.
Ingredients
2 potatoes, thinly sliced
4–5 fresh mushrooms, stems removed and sliced
2 tbsp olive oil
A pinch of fresh or dried thyme
Salt and black pepper, to taste

Method
Prepare the foil: Tear off a 30×30 cm sheet of heavy-duty foil and fold up the edges to prevent leaks.
Assemble: Arrange the potato and mushroom slices in the center, drizzle with olive oil, then sprinkle thyme, salt, and pepper.
Seal: Fold the top and bottom together, then tightly roll the sides to create a fully sealed packet.
Cook: Place the packet in the embers or at the edge of a charcoal fire. Cook for 10 minutes per side (20 minutes total), flipping once for even heat.
Serve: Carefully open after a few minutes to cool. The potatoes and mushrooms will be infused with aromatic oil and perfectly tender—serve alongside grilled meats or a fresh salad.
Tips
For extra richness, add a handful of shredded cheese or crumbled bacon before sealing.
Swap thyme for rosemary or oregano to vary the flavor to your liking.
